Stuffed Green Peppers

 Serves:  4
Prep:  25 minutes
Cook:  55 minutes 

4 large     peppers
2 tbsp      oil
3 cloves   garlic, minced
½ cup      onion, diced
1 lb.         ground meat
1 lb.         ground pork
1 cup       Italian bread crumbs
½ cup      Parmigiano Reggiano,
                grated
2 tbsp      Italian Seasoning
4              eggs, beaten
½ cup      cooked rice
2              15 oz cans tomato sauce
salt and pepper to taste

1)  Cut tops off peppers then remove seeds and membranes.  Rinse peppers under cool water. 

2)  Preheat oven to 350◦.  Heat a medium skillet over medium heat.  Add oil, garlic, onions and sautee for two minutes, stirring frequently.

3)  Combine ground meat, ground pork, sauteed onion and garlic, bread crumbs, cheese, italian seasoning, eggs, rice, and salt and pepper.

4)  Fill peppers with meat mixture.

5)  Coat the bottom of an  8 x 8 casserole dish with one can of tomato sauce.

6)  Place stuffed peppers in dish and pour remaining can of tomato sauce over peppers.  Bake for 55 minutes.
